Omelet Muffins (8 servings)

Ingredients:

4 eggs

4 egg whites (½ cup)

½ cup of cheese

¼ cup of milk

1 cup of mixed vegetables of your choice

½ teaspoon of baking powder

½ teaspoon of oil

salt and pepper

Directions:

1. Preheat oven to 375 degrees

2. Sautee vegetables for 5 minutes

3. Mix eggs, oil, milk, salt and pepper, and baking powder

4. Grease a muffin pan

5. Fill muffin pans with cooked vegetables

6. Sprinkle cheese into each tin

7. Pour egg mixture into each tin

8. Bake for 25 minutes

9. Remove, cool for 5 minutes, and serve

Lunch

Hearty Turkey Sandwich

Ingredients:

whole wheat bread

3 slices of turkey

1 slice of swiss cheese

1 piece of lettuce

1 tomato slice

avocado

mayonnaise

Directions:

1. Toast bread

2. Spread mayonnaise on one slice, avocado on the other

3. Layer turkey, cheese, lettuce, and tomato on a piece of bread

4. Put together

5. Enjoy!

Dinner

Oven Fried Chicken

oven fried chicken

Ingredients:

8 chicken drumsticks

½ cup of raw/slithered almonds

1 egg

½ cup of coconut or olive oil

salt and pepper to taste

Italian herbs of your choice (¼ cup)

2 teaspoons of garlic powder

Directions:

1. Clean chicken, pat dry

2. Preheat oven to 350 degrees

3. Grease a nonstick baking pan

4. Mix herbs, garlic, salt and pepper in a bowl

5. Finely chop almonds

6. Put half of the herb mix over the chicken; mix other half in almond crumbs

7. Whip the egg and pour over all the chicken

8. Pour almond mix into a Ziploc bag

9. Coat each drumstick with oil and put it in the bag with the mixture

10. Shake until chicken is coated with crumbs; repeat with all drumsticks

11. Arrange in pan and bake for 1 hour or until golden-brown
